Android : Game logic in level games

I'm planning to make a level-based game where you have to complete level one to unlock level two and so on. My game uses physics like in tiny wings, angry birds and cut the rope. My problem is: when I make a new level, I want it to be difficult, but somehow possible to complete. How do big companies design their game levels to have a certain difficulty, but are not impossible?
